Fresh Fruit in White Velvet Parfait
Blueberry Hill Inn, Goshen, Vermont
2 cups whipping cream
1/2 cup sugar
Dash of salt
1 tablespoon unflavored gelatin, dissolved in 2 tablespoons cold water
2 cups sour cream
2 cups fresh strawberries, raspberries, and blueberries
8 whole berries for garnish
Bunch of fresh mint sprigs
Make sure to pick over and wash the fruits. Hull and slice them, if necessary.
In large saucepan, heat the cream until it bubbles. Stir in the sugar and salt. Remove from heat.
Add the softened gelatin to the cream, and stir until its dissolved. Add the sour cream, and stir until well blended. Let cool.
In parfait glasses, spoon a layer of the cream mixture, then a layer of the berries, then a layer of the cream mixture.
Refrigerate the parfaits for 2 hours, or until firm.
Garnish each parfait with strawberries, raspberries, and blueberries and a fresh mint sprig.
