Ingredients
1 pound fresh calamari (squid)
2 cups milk
1 cup cornmeal
1/2 cup flour
Tomato sauce

Preparation
Use your favorite marinara sauce, or reduce fresh or canned tomatoes and add a bit of basil, to taste.  Heat in saucepan.

Mix cornmeal and flour in bowl.  Put milk into another small bowl.

Dip calamari in milk.  Toss calamari in the cornmeal and flour mixture

Place in deep fryer basket.  Carefully submerge basket into hot oil and fry until golden brown.

Ladle tomato sauce onto plate and add the deep-fried calamari.

Serves 2.

Note: Calamari (squid) is traditionally sold already cleaned, however, you may occasionally need to remove the viscera and beak (typically known as the eye).  If the squid has already been cleaned, simply cut the head away from the legs, and then cut these into the appropriate size for your recipe.

To clean, use the tip of a sharp fillet knife to cut around the eye and lift it from the squid.  Peel the skin away from the body by pulling firmly.  Pull the suction cups away from the tentacles.  Your squid is ready to use.  You may wish to ask your local fishmonger to prepare your squid.
