Goat Cheese Asparagus Rollups
1 box phyllo (fillo) dough
2 bunches asparagus, blanched
4 oz. chevre (goat cheese)
1/2 cup butter, melted
Lay out 1 sheet of phyllo dough. Brush with melted butter.
Place another sheet of phyllo on top of first. Brush with melted butter.
Place two stalks of blanched asparagus on phyllo. Sprinkle with chevre, and roll.
Coat outside of rolled phyllo with melted butter.
Continue process until you have used up either the asparagus or the phyllo.
Cook at 400 degrees F for 15-to-20 minutes, until golden brown.
