Linguini Chicken

1-to-2 cups uncooked chicken, cut for stir-fry
1 lb. linguini noodles, cooked
2 tablespoons feta cheese
1/2 cup Kalamata olives
1/4 cup red pepper, diced
1/4 cup green pepper, diced
1/4 cup onions, diced
2 teaspoons chopped garlic
1 teaspoon olive oil
1 tablespoon pesto paste
1/4 cup tomatoes, chopped
1/4 cup white wine
1/2 cup artichoke hearts

Sauté chicken, set aside.

While cooking pasta, sauté peppers, onions, and garlic in olive oil using a skillet.

Add tomatoes, wine, artichoke hearts, pesto, and Kalamata olives.

Add chicken and linguini, and sauté while tossing for 1 minute.

Garnish with crumbled feta cheese.

Serves 2.
