Skillet Meatloaf 
Makes 2 Servings 
 
Get your meatloaf fix with this simple stove-top recipe. It requires only a skillet with a lid and less than 30 minutes of your time. Serve it with a half a cup of grains and steamed green beans. 
 
Ingredients  
1/2 c ketchup 
2 Worcestershire sauce 
1 t onion powder 
1/2 t garlic powder 
8 oz ground turkey 
2 T breadcrumbs or rolled oats 
2 T parmesan cheese 
2 t olive oil 
1/4 c chicken broth  
1 T chopped fresh parsley (optional) 


Directions 
Mix the ketchup, Worcestershire sauce, onion powder and garlic powder, until well combined. 
Transfer 2 T of the seasoned ketchup to a medium bowl and add the turkey, breadcrumbs, Parmesan, and salt. Mix well with your hands and form into 2 plump patties. 
Heat the oil in a nonstick skillet on medium heat for 30 seconds. 
Add the seasoned turkey patties and heat for 1 minute on each side, or until browned. 
Pour in the broth, cover, and reduce heat to medium-low. Cook for about 15 minutes, until fully cooked. Transfer the patties to a plate. 
Pour the remaining seasoned ketchup into the pan and heat on low for 2 minutes or until warmed. 
Pour the warmed seasoned ketchup over the meatloaf patties. 
 
REUSE IT:  Store one patty in an airtight container in the refrigerator for up to 4 days. You can use it in the Spaghetti Bolognese.
