Smoked Baby Swiss Tartlets
Fanny Mason Cheese, Walpole, New Hampshire
2 packages pre-made fillo dough tartlets* (found in the frozen food section of your grocer's)
1 1/2 cups (about 1/2 lb.) Fanny Mason Smoked Baby Swiss, grated
1 tablespoon heavy cream
2 tablespoons milk
1/2 cup cooked, chopped lean bacon
3 tablespoons finely chopped parsley
Dash of salt and pepper
Pre-heat oven to 425 degrees F.
Place tartlet shells on greased cookie sheet.
To make filling, whisk cream, milk, and eggs together until smooth.
Stir in the grated cheese, bacon, parsley, and spices.
Spoon filling into tartlet shells and bake 15 minutes, or until bubbly and golden.
Makes 30 tartlets.
*If you are a "from scratch" person, and you have small tart molds, you may substitute any pastry crust with perfectly fine results. Roll dough out to 1/8-inch thickness and line molds, and then proceed as directed.
