Vermont Corn Fritters
2 cups fresh corn, scraped from the cob
1/2 teaspoon salt
2 tablespoons King Arthur's all-purpose flour
1 teaspoon sugar
1 tablespoon butter, melted
Mix together fresh corn, eggs, salt, flour, sugar, and butter. (Amount of flour can vary. If the corn is very milky and wet, use more flour. Batter should not be runny.)
Heat oil in deep fryer or skillet. (We used a deep fryer, but can also be made in cast iron skillet. If cooking in iron skillet, cover 1/4 inch with oil.)
Add large spoonfuls of batter and cook 3-to-4 minutes per side.
Serve with real maple syrup.
An old fashioned New England favorite.
