A Winning Pecan Pie
Carol Day, New England Cooks Co-Host.
Even though I'm "retired " from my appearances on New England Cooks, I still love the shows and the recipes that are always yummy and interesting to make. One day as I was making a pecan pie for the holidays, Tony stopped by and begged/requested and smilingly asked me to make one for his future son in law. I did (of course), and got rave reviews.
Here's the pecan pie recipe I use and have used for many years….
Ingredients
1/2 cup sugar
3 eggs
1/4 cup butter
1 cup pecans
1 cup light corn syrup
Recipe for plain pastry pie shell
1/4 teaspoon salt
Preparation
Cream sugar and butter.
Add syrup and salt, and beat well.
Beat in eggs, one at a time.
Add pecans.
Pour into 9-inch pastry-lined pie pan.
Bake at 350 degrees F for 1 hour and 10 minutes, or until knife comes out clean.
FYI....This recipe is from the red and white checked "Better Homes and Gardens New Cookbook " from 1956!
